Carrot Cupcakes recipe

It’s a seriously easy recipe to follow and takes you only around an hour to do so! I did it for breakfast this morning but I was hungry so I didn’t take much photos! Make it for yourself!

INGREDIENTS : 
112.5 g  (1/2 cup) of sugar
80 g of vegetable oil
1 egg
1/3 tsp of vanilla extract
79 g (1/2 cup) of flour
1/2 tsp of ground cinnamon
1/2 tsp of baking soda
1/3 tsp of salt
115 g of grated carrots
30 g of walnuts
45 g of raisins

RECIPE : 
PREHEAT to 200c
BEAT sugar, oil and egg
ADD vanilla extract to bowl
SIFT flour, cinnamon, baking soda and salt in separate bowl
COMBINE both mixtures
TOSS carrots, walnuts and raisins
ADD to main mixture

BAKE for 10 mins at 200c

BAKE at 180c for the following 30 mins
SERVE 6.

(COOL cupcakes if you wish to apply frosting. I had leftover cream cheese frosting from baking a  hummingbird cake.)
